Varietal: 85% Arneis, 15% RieslingTasting Notes: Straw yellow with green reflections. Rich, harmonious, fresh, well structured, quite balanced, persistent. Pale sunshine yellow color with fresh floral, citrus and melon aromas with hints of almonds. Ample, complex, fresh fruit, Golden apple, white peach, acacia flowers. A dry, medium bodied white wine with crisp acidity, well-balanced, elegant wine with good complexity and a lingering finish.
Winery Information: Paitin Di Pasquero EliaHarvest: The grapes are selected from the Vineyard located in Vezza d’Alba, planted from 1991 to 1994, 4.600 plants per hectare, harvested in mid September.
Winemaking: The grapes are crushed and moved to a rotofermenter for 24 hours of cold maceration at 12° C (53°F) next day pressed and clarified. Alcoholic fermentation occurs in stainless steel tanks at low temperature (14°C) with selected yeast. There is no malolactic fermentation which preserves acidity and freshness. The wine is held “sur lie” in stainless steel tanks until bottling.
Food Pairings: As an aperitif with light hors d'ouevres, crudites, seafood, salads, asparagus,light soups, simply prepared veal, chicken and creamy cheeses.

Tasting Note: Txakoli with 13.5º of alcohol in the line of 2008 and 2010, introducing citrus notes of grapefruit, ripe white fruit, quince, white delicate flowers, balsamic herb with aniseed and some spicy notes. This vintage is appetising, powerful, and a bit rebel. Citric notes of grapefruit, very mature white fruit, wild herbs and some spicy notes. The palate is broad and unctuous, from his beginning the acidity leads with balance of the maturity that he managed this vintage year. His bottle aging is providing elegance and complexity to this wine that grows powerful and tasty.
The SELECTION, a different txakoli as the same Urdaibai Biosphere Reserve where it produces; natural, complex, in permanent evolution and full of variety. Itsasmendi 7 transmits with elegance the variables that happened in each vintage. The elaboration of the Itsasmendi number 7 began in 2003 in order to bring to the public a wine with longer life and displaying full expression of the grapes characteristics in a different way. One of the hallmarks of this vintage is based on the thorough selection of ripe grapes with plenty of freshness and personality and fermentation with a layer of floating skins. With 20% of Riesling we offer a well- balanced wine with more structure and good ageing potential. Vineyards: It´s obtained from a selection of grapes from different plots. A laborious zoning of the vineyards made in recent years, based in our experience, knowledge and viticulture techniques. Vintage: Maturing during several months in the tank, achieving more structure and volume. To enjoy the evolution and his potential for aging. 2012 has been an atypical year, the hydrological stress in some vineyards has modified the normal order of the ripening. More fresh plots have ripened earlier and better. The subzones with less prominence than other years provide the Txakoli´s structure.
