Itsasmendi No. 7 2012
Varietal: 80% Hondarrabi Zuri, 20% Riesling
Tasting Note: Txakoli with 13.5º of alcohol in the line of 2008 and 2010, introducing citrus notes of grapefruit, ripe white fruit, quince, white delicate flowers, balsamic herb with aniseed and some spicy notes. This vintage is appetising, powerful, and a bit rebel. Citric notes of grapefruit, very mature white fruit, wild herbs and some spicy notes. The palate is broad and unctuous, from his beginning the acidity leads with balance of the maturity that he managed this vintage year. His bottle aging is providing elegance and complexity to this wine that grows powerful and tasty.
The SELECTION, a different txakoli as the same Urdaibai Biosphere Reserve where it produces; natural, complex, in permanent evolution and full of variety. Itsasmendi 7 transmits with elegance the variables that happened in each vintage. The elaboration of the Itsasmendi number 7 began in 2003 in order to bring to the public a wine with longer life and displaying full expression of the grapes characteristics in a different way. One of the hallmarks of this vintage is based on the thorough selection of ripe grapes with plenty of freshness and personality and fermentation with a layer of floating skins. With 20% of Riesling we offer a well- balanced wine with more structure and good ageing potential. Vineyards: It´s obtained from a selection of grapes from different plots. A laborious zoning of the vineyards made in recent years, based in our experience, knowledge and viticulture techniques. Image: I t is personalized every year through a different picture that represents some aspect related with the Winery. Vintage: Maturing during several months in the tank, achieving more structure and volume. To enjoy the evolution and his potential for aging. 2012 has been an atypical year, the hydrological stress in some vineyards has modified the normal order of the ripening. More fresh plots have ripened earlier and better. The subzones with less prominence than other years provide the Txakoli´s structure. Confidences de Prieure Lichine 2009
Varietal: 40% Cabernet Sauvignon, 60% Merlot
Tasting note: Cassis and mineral nose. A palate of powerful black fruit and yielding tannin that is complex, interesting and ageworthy. This is polished and open, with a core of juicy plum, briar and black cherry fruit. Nicely rounded through the finish and accessible now.

Chateau La Tour de Mons 2008
Varietal: 56% Merlot, 39% Cabernet Sauvignon, 5% Petit Verdot
Tasting Note: Bright garnet colour. The nose is delicate, with aromas of red cherry, violet and hints of black pepper. On the palate, the wine is full bodied, tender and shows a delicate structure with supple and perfectly integrated tannins with hints of spices. Long length.

Climate Condition: The grapes slowly ripened over the season. The vineyard was managed with great care, allowingus to start the harvest on 29th September. The sanitary state of the vineyard was perfect with perfectly ripe grapes from every plot. We produced a wine that is enticing with a great ageing capacity.
Ripening Phases:
Flowering: around 7th June Véraison (grape ripening): around 11th August
Harvest: From 29th September until 15th October
Winemaking: Following hand-picking, the grapes are carefully sorted once again at the winery. Fermentation is carried out in temperature controlled stainless-steel tanks allowing slow fermentation at low temperature. The wine ages 12 months in French oak barrels, 40% of which are new.

Inviting, aromatic nose with accents of ripe fruits and an exotic touch. Fine ripe oaky nose, forthright, creamy and full bodied. On the palate, a dense, tightly-wound wine with very evident oak. Undoubtedly holds great potential that has yet to express itself fully. Impressive concentration, lingering, vibrant dark fruit finish. This estate, located in the province of Castile, near Salamanca, has vines almost 100 years old. Winegrowing tradition in this area predates the Romans. In the XIIIth and XIVth centuries, Toro was granted the right to sell its wines outside the region, when its wines first became know outside its border. Thanks to their excellent keeping qualities, Toro wines were often shipped to settlers in the americas.
Location: Morales de Toro. Area under vine: 4.40 hectares. Age of vines: 40 years. Vine density: 1,000 vines per hectare. Terroir: Sandy siliceous-clay soil with pebbles and large flat stones providing excellent natural drainage. An exceptional terroir located near the meandering Douro river. Viticulture: Non-trellised gobelet-pruned vines. Bud thinning. Leaf thinning. Bunch thinning at the start of the ripening. Winemaking: The grapes are hand-picked into crates, manually destemmed, and then sorted on a specially-equipped table. 2/3 of the harvest is fermented in wooden vats. Cool pre-fermentation maceration is followed by traditional, temperature-controlled alcoholic fermentation. Manual punching down of the cap. Malolactic fermentation and ageing take place in new French oak barrels. The wine is transferred by gravity flow throughout all winemaking operations, and bottled by hand. Yield: 20 to 30 hectolitres per hectare.
