Varietal: 85% Arneis, 15% Riesling

Tasting Notes: Straw yellow with green reflections. Rich, harmonious, fresh, well structured, quite balanced, persistent. Pale sunshine yellow color with fresh floral, citrus and melon aromas with hints of almonds. Ample, complex, fresh fruit, Golden apple, white peach, acacia flowers. A dry, medium bodied white wine with crisp acidity, well-balanced, elegant wine with good complexity and a lingering finish.

Winery Information: Paitin Di Pasquero Elia

Harvest: The grapes are selected from the Vineyard located in Vezza d’Alba, planted from 1991 to 1994, 4.600 plants per hectare, harvested in mid September.

Winemaking: The grapes are crushed and moved to a rotofermenter for 24 hours of cold maceration at 12° C (53°F) next day pressed and clarified. Alcoholic fermentation occurs in stainless steel tanks at low temperature (14°C) with selected yeast. There is no malolactic fermentation which preserves acidity and freshness. The wine is held “sur lie” in stainless steel tanks until bottling.

Food Pairings: As an aperitif with light hors d’ouevres, crudites, seafood, salads, asparagus,light soups, simply prepared veal, chicken and creamy cheeses.
